The Witcher 3 Blood and Wine Sidequest: Knight For Hire
the blood and wine expansion's hardest sidequest, knight for hire, has a ton of unfair encounters, situations where you have to save paper knights from being two-shotted, and other things I won't deign to mention, but it's very fulfilling when you finally beat it.
